Amaranth meatballs

Amaranth meatballs are my second experiment with this cereal. After adding it to the chicken salad I wanted to try other recipes with amaranth and so I decided to prepare something inviting, what else if not the meatballs !? Starting from the cooked amaranth, the potato is cooked and everything is combined with the remaining ingredients, so as to form the dough of the meatballs. Quick cooking in a pan and your vegetarian meatballs are ready, enjoy your meal! : P

  • Servings for 12 meatballs:
  • 100 gr of amaranth
  • 1 potato
  • grated lemon peel
  • parsley
  • bread crumbs
  • 1 tablespoon of pecorino
  • salt
  • seed oil
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make amaranth meatballs

According to the times and methods indicated on the package, cook the amaranth in water.
Usually it cooks for about 20 minutes in a quantity of water that is double its weight.
Once drained, shell it with a fork and let it cool.

Meanwhile, boil the potato, cut it, peel it and cut it into pieces.

Then add the amaranth potato and also add breadcrumbs, parsley, lemon peel, pecorino cheese and salt.
Knead to mix.

With the dough obtained, form small meatballs and cook them in a pan with a drizzle of oil.

Your amaranth meatballs are ready to be brought to the table.
