The artichoke dumplings are small, delicious rustic compounds with a crispy casket of puff pastry that encloses an artichoke heart, enriched with stringy scamorza and tasty salami. A simple appetizer to make, but rich and delicious to bring to the table a first hint of spring. Of course you can change the combination of the filling, using for example cooked ham and fior di latte to accompany your artichokes with a more delicate mix of flavors, or maybe simply add olives for a boost of extra flavor.   • Doses for 6 bundles:
  • 6 artichokes
  • 6 slices of Hungarian salami
  • 1 roll of puff pastry
  • 40 gr of scamorza cheese
  • milk for brushing
  • salt
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make artichoke dumplings

Clean the artichokes: remove the hardest external leaves and leave only the tender heart with a couple of cm of stem.
Soak them in a bowl with water and lemon for at least 10 minutes.

Drain the artichokes and blanch them in boiling salted water: check the cooking by testing the stems with a fork.
Drain them and leave them upside down in the colander to remove all the water.

Then start to stuff them: cut the scamorza into small cubes and fill the center of your artichokes.

Obtain 6 circles from the puff pastry, of a size suitable to enclose the artichokes almost entirely, leaving only the stem out.
Place a slice of salami on each circle, then lay the artichokes on top, one per circle, upside down.
Then wrap each artichoke in the salami and in the pastry.

Brush the puff pastry with a little milk, then cook for 10-15 minutes or until golden brown in a preheated convection oven at 220 ° C.

Your artichoke rolls are ready: you can serve them hot, warm, or even cold.
