These eggplant rolls with bacon are really delicious!   • 2 of eggplants
  • 100 gr of bacon
  • 2 slices of sandwich bread
  • 2 spoons of pecorino
  • 1 tablespoon of olive oil
  • garlic
  • parsley

Method

How to make eggplant rolls with bacon

Wash and peel the aubergines, then cut them into longitudinal slices.

Roast the aubergines.

In a bowl, season the breadcrumbs wet and squeezed with the grated pecorino cheese, a tablespoon of oil, and chopped garlic and parsley.

With the mixture obtained form balls to be placed at the base of each slice of aubergine.

Roll the slices around the filling.

Then wrap each roll in a slice of bacon.
