Fried fennel is an amazing side dish, perfect for parties or for all the times you want to bring a little panache to the table! The recipe is very simple and the result is super tasty, so there is no excuse: if you like fennel but want to serve it in a slightly original and different way than usual, without skimping on the taste, try this recipe and you won’t regret it; )

  • Doses for 6 people:
  • 4 fennel
  • 2 eggs
  • 25 gr of grated parmesan
  • 1 lemon
  • 2 sprigs of thyme
  • 2 sprigs of marjoram
  • flour 00
  • bread crumbs
  • salt
  • pepper
  • Seed oil for frying
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make fried fennel

First clean the fennel by removing the green stalks, the outermost leaves and the final part of the core, and washing them under water.
Cut them into slices leaving the bases together, then put them in a bowl full of cold water acidulated with lemon juice and leave them to soak for at least 10 minutes.

Drain the fennel and blanch them for 5 minutes in boiling and slightly salted water.
Drain them again, dry them with a clean cloth, then season them with parmesan, salt, pepper and herbs.

Pass the fennel, one at a time, in the flour, then in the beaten eggs, finally in the breadcrumbs.

Finally fry them in hot oil, turning them over to brown them evenly.
As they are ready, drain them on kitchen paper.

The fried fennel are ready, you just have to serve them up and serve them immediately.
