Potato sandwiches are a very nice idea to serve a rather classic side dish in a decidedly different way than usual. These are in fact very normal potatoes, which are boiled and cut into slices, and so far nothing strange, after which they are stuffed with cheese, wrapped with raw ham, skewered with a sprig of rosemary and cooked in the oven. What do you think? I liked them a lot: not only are they too cute to look at, with their sprig of rosemary and the touch of color of the ham, but above all they are delicious!

  • Doses for 4 people:
  • 4 potatoes
  • 100 gr of scamorza
  • 4 slices of raw ham
  • 20 gr of butter
  • 4 sprigs of rosemary
  • salt
  • pepper
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make potato sandwiches

First wash the potatoes, prick the skin with a fork, wrap them with cling film and cook for 5 minutes at 800W in the microwave (alternatively, cook them normally: wash them, put them in a pot, cover them with plenty of cold water and cook for about 30- 35 minutes or until they are almost completely cooked, so drain them).
Remove the film, peel them, let them cool and cut them horizontally into 3 slices, taking care not to break them.

Stuff the potatoes as if they were a sandwich: put 1 slice of scamorza on the base of the potato, cover with the intermediate slice of potato, add 1 second slice of scamorza and close with the final slice of potato.
If you want, season the potato with salt and pepper, without exaggerating because the ham will become very tasty after cooking.
Wrap each potato with a slice of ham, then block the various layers with a sprig of rosemary (alternatively you can use a toothpick).

Put all the potatoes in a pan, add a few flakes of butter and cook for 15 minutes at 220 ° C, in a preheated oven, so that the cheese melts and the ham becomes slightly crispy.

The potato sandwiches are ready, serve hot or lukewarm at best.
