After yesterday’s light recipe, today the artichoke meatloaf is all there, a unique goodness! Obviously for my husband I had to prepare a different second dish, discarding them from the inside was not an option that took into consideration because not even the smell of artichokes bears, does not know what was lost, a meatloaf of 10 and praise! But let’s move on to other things, the preparations for Easter treats are finished, I spent a really nice afternoon with my sister and my mom who helped me with ideas, suggestions and decorations, now I just have to upload the recipes and photos of the our messes and post them on the blog so as to give you some ideas in case you want to prepare something nice to serve or give for Easter.   • Ingredients for 6 people:
  • 600 gr of ground beef
  • 2 eggs
  • 2 slices of sandwich bread
  • 50 gr of parmesan
  • 120 gr of cooked ham
  • 200 gr of fior di latte
  • 4 artichokes
  • 1 clove of garlic
  • 150 ml of broth
  • parsley
  • salt
  • pepper
  • oil
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make meatloaf with artichokes

Clean the artichokes, removing the hardest external leaves, part of the stem and cut the tips.
Cut the artichoke hearts into wedges, remove any beard and put them in a bowl with the water and the juice of half a lemon for a few minutes.

Brown a garlic clove in the pan, then add the artichokes in the pan and sauté them on a high flame

Lower the heat, add the salt, pepper and chopped parsley, add a ladle of hot broth and let it continue cooking for about ten minutes, covering with a lid

In a bowl put the minced meat with the eggs, the previously softened sandwich bread in a bowl with the water, the grated parmesan cheese, the salt and the pepper

Knead with your hands until a homogeneous mixture is obtained

Place the parchment paper on a surface, and spread the meat mixture on top, flatten it into a rectangle

Now lay the slices of cooked ham, the sautéed artichokes and the slices of fior di latte in layers.

With the help of parchment paper, wrap the meatloaf on itself.

Close the edges and with the help of your hands seal everything well.

Brush the meatloaf with the beaten egg and cover with a few curls of butter
Put the meatloaf with artichokes in an ovenproof dish and bake in a preheated oven at 180 ° and cook for about 40 minutes

Remove from the oven and wait a few minutes before cutting into slices and serving
