Sweet and sour pumpkin is a delicious side dish and easy to make. The recipe comes from the Sicily region and is prepared by first frying the slices of pumpkin and then making them flavor in oil, vinegar, sugar, garlic and salt.
This type of sweet and sour preparation allows you to store the vegetables for several days, in the refrigerator, and to do nothing but take it out of there when you have to bring it to the table.   • Doses for 4 people:
  • 800 gr of pumpkin
  • extravirgin olive oil
  • 6 spoons of white vinegar
  • 3 spoons of sugar
  • 1 clove of garlic
  • mint
  • salt

Method

How to make sweet and sour pumpkin

Clean the pumpkin by removing the peel and the various internal seeds.
Then cut it into thin but not small squares.

Put oil in the pan and, when it is hot, add the slices of pumpkin.
Fry them on both sides for about 2 minutes.

Then lift the pumpkin, salt it and keep it aside.
In the same oil in which you will have fried it, add the vinegar and sugar.
When the latter has melted, also add the minced garlic and mint.

At this point put the slices of pumpkin back, mix gently and cook for a few minutes.

Serve your sweet and sour pumpkin after keeping it in the refrigerator.
