Buondì, on this gray and rainy day I place the recipe for this veal roast stuffed with Parma ham and flaky Parmesan cheese seasoned with a very delicate Lambrusco sauce. Despite having prepared this roast during the Christmas holidays, I postponed the publication of this recipe because the final photo did not do justice to the goodness of the dish, but then I convinced myself to leave it anyway because it is really worth trying.
Well guys, today they should assemble the doors in the office, tomorrow they should come to do the finishing touches of painting and if god wants, from Monday he starts working again without tools, cans of paint and boxes around;) I greet you and wish you a good day, in the meantime I reply to some messages, kisses; *

  • Ingredients for 4 people:
  • 600 gr of veal in a single slice
  • 100 g Parma raw ham
  • 50 gr of parmesan
  • 25 gr of butter
  • 1 clove of garlic
  • 1 sprig of rosemary
  • 1 teaspoon pink pepper
  • 100 ml of broth
  • 100 ml of Lambrusco red wine
  • 100 ml of cooking cream
  • salt
  • oil
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)
  • preparation: 30 min
  • cooking: 1 hour
  • total: 1 hour 30 min

Method

How to make the Parma rose

Place the slice of veal between two sheets of parchment paper and beat it with a meat grinder until a 1 cm thick slice is obtained.

Spread the slices of raw ham and the julienne-cut parmesan over the meat.

Roll up the meat on the filling

Tie in the kitchen twine and flavor with a pinch of salt.

put the oil, butter, a clove of garlic and a sprig of rosemary in a saucepan. When the garlic is golden brown, add the roast and the pink pepper.

Sauté then add the boiling broth

Cover and cook over low heat with a lid for 20 minutes. Once cooked, lift the roast and heat it

Add the Lambrusco wine and cooking cream to the cooking juices, raise the heat and thicken until a sauce is obtained

Cut the roast into slices and pour the obtained Lambrusco sauce over the entire surface. Serve the roast with hot ham
