The puff pastries, or glazed puff pastries, are a very sweet little pastry that is often found in supermarkets. They are a sort of very light puff pastry biscuits, brushed with a little royal icing and then decorated with a little jam. That’s all. You can have fun making them with your children, even with shapes and decorations different from this classic that I made, and then eat them for a snack.   • Servings for about 20 biscuits:
  • 1 roll of rectangular puff pastry
  • 100 gr of jam
  • 75 gr of icing sugar
  • 1/2 egg white
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)
  • preparation: 30 min
  • cooking: 15 min
  • total: 45 min

Method

How to make puff pastries

First prepare the icing: put the sugar in a bowl and start adding the egg white a little at a time, stirring until a sort of smooth but consistent batter is obtained.

Take the dough and cut it in half lengthwise (leaving it on its sheet of parchment paper), then cut each of the rectangles thus obtained into strips of about 3 cm wide.
Then spread the glaze over the whole sheet until it is evenly covered.

Pass the jam with a colander, then put it in a sac-à-poche and with a smooth and thin spout create the lozenge decorations typical of the puff pastries.
Gently, move the parchment paper onto the oven tray, then separate the puff pastries, moving them slightly apart.
Bake for about 15 minutes at 200 ° C in a preheated convection oven.

The puff pastries are ready, let them cool well before enjoying them!
